Some consumers think that all fat is bad. In truth, fats perform many vital functions in the human body. Helping to keep us warm, providing energy and regulating the immune system are only a few of the functions. Fats promote flavour, aroma and palability in foods. Fats also carry essential fat-soluble vitamins. Two essential fatty acids are essential in the human diet because our bodies cannot make them. Both of these fatty acids are found in canola oil; alpha-linolenic acid (ALA), an omega-3 fatty acid, and linoleic acid (LA), an omega-6 fatty acid.
